Belizean Boil Up
A cherished Saturday morning tradition across Belize — a hearty one-pot of pig tail, boiled eggs, cassava, sweet potato, and plantain simmered together in a thick tomato broth. Simple, nourishing, and deeply comforting.
Method
- 1
Rinse and clean pig tails well. Cover with cold water in a large pot, bring to a boil, and discard the first water.
- 2
Refill with fresh water. Add garlic, spring onions, and salt. Boil for 45 minutes until tender.
- 3
Add diced sweet potato, cassava (if available), and green plantain pieces. Cook for 20 minutes.
- 4
Add halved hard-boiled eggs and chopped tomatoes. Simmer for 10 more minutes.
- 5
Add chilli, adjust seasoning generously. The broth should be flavourful and slightly thick.
- 6
Serve in deep bowls with fresh corn tortillas or fry jacks on the side.
Chef's Note
